Japanese Chicken Meatballs

120 ml Soy sauce, shoyu

60 ml Alcohol, Sake

50 g Sugar, brown

Steps

First, prepare the sauce. Clean, wash, and roughly chop the spring onion. Peel and crush the garlic cloves. Peel the ginger and slice it thinly. In a medium-sized pot, mix mirin, soy sauce, sake, brown sugar, rice vinegar, spring onion, garlic, ginger, and pepper. Place the pot on the stove and bring the mixture to a boil over high heat, then reduce the temperature and let the sauce simmer for about 45 minutes or until it thickens and becomes syrup-like. Strain the prepared sauce through a fine sieve and store it in the refrigerator until use.

While the sauce is cooking, prepare the meatballs. Preheat the oven to 200 degrees Celsius. Clean, wash, and finely chop the spring onion. Peel and finely chop the garlic, and peel and finely grate the ginger. Place the ground chicken in a large bowl. Add breadcrumbs, beaten egg, spring onion, ginger, garlic, sesame oil, salt, and pepper, and mix all the ingredients well with clean hands until you get a uniform mixture.

With wet hands, shape the chicken mixture into medium-sized meatballs and place them on a baking tray lined with parchment paper. Put the tray with the meatballs in the preheated oven for 20 to 25 minutes. You can turn the meatballs during baking to ensure they brown evenly on all sides.

Serve the baked meatballs with cooked soba noodles and the cooled sauce.

Advice
Mirin is a type of rice wine, similar to sake, but it contains less alcohol and a bit more sugar. In the original recipe, panko breadcrumbs are used to prepare the meatballs. If you dont have them, you can substitute them with regular breadcrumbs.
