Jota with Turnips
A meatless version of the popular Slovenian winter spoon dish.

Ingredients

300 g Beans, grains

1 piece Spices, bay (leaves)

400 g Potatoes, white

500 g Turnip

2 spoons Oil, vegetable oil, canola

100 g Onion, raw

1 teaspoon Spices, paprika

Steps

Drain the soaked beans, rinse them, place them in a pot, and cover with fresh cold water. Add a bay leaf and bring to a boil. Drain the water, cover the beans with fresh cold water again, and cook slowly until they are completely soft. Salt them just before they are done cooking.

Taste the turnips, and if they seem too sour or salty, rinse them under running water. Place them in a pot and cover with water. Add a few juniper berries, peppercorns, and chopped or crushed garlic. Cook the turnips until soft.

Peel the potatoes, wash them, and cut them into pieces. Cook them in salted water. Drain the cooked potatoes (save the cooking liquid!). Mash half of the cooked potatoes.

Peel the onion, finely chop it, and sauté it in a little oil. Add sweet paprika powder, quickly stir, and remove from heat.

In one pot, combine all the ingredients: cooked turnips, potatoes, drained beans, and sautéed onion. Use the water in which the potatoes and turnips were cooked for the broth. Bring the jota to a boil and season with pepper and salt to taste. Serve the prepared dish in deep bowls or soup plates and accompany with bread.

Advice
The addition of ground paprika can also be omitted.
