Steps
-
In a bowl, sift together the flour, powdered sugar, and baking powder. Add salt, mix, and then sprinkle cold butter cut into cubes on top. Using your fingertips, work the butter into the dry ingredients, lifting the mixture to make it airy and crumbly. Add egg yolks and milk, and quickly knead into a dough. Divide the dough into two parts. Store one half in the freezer and the other half in the refrigerator for 60 minutes.
-
Coarsely chop the walnuts. Wash, peel, and core the apples. Slice them thinly and mix with lemon juice, vanilla sugar, cinnamon, and chopped walnuts.
-
Grease a deep rectangular baking dish (24 x 30 cm) with butter and dust with flour. Preheat the oven to 180°C. Take the dough from the refrigerator and roll it out on a lightly floured surface to the size of the baking dish. Transfer it to the dish using a rolling pin and gently press it into the bottom with your fingers. Prick it several times with a fork, then spread the apple filling over it.
-
Beat the egg whites with sugar and lemon juice until stiff peaks form, then gently and slowly fold in the sifted cornstarch. Spread the meringue evenly over the apple filling. Coarsely grate the dough from the freezer on top. Bake the pastry in the preheated oven for about 45 minutes.
-
Remove the apple pie from the oven and let it cool. Once cooled, dust with powdered sugar or cinnamon, cut into slices, and serve.
