Juicy Baked Chicken Fillets with Vegetables
To ensure the meat is very juicy and flavorful, a tasty marinade is prepared in which it is marinated for some time before baking. We also recommend bringing the fillets to room temperature before baking, as they will cook more evenly. The tender chicken meat will be perfectly complemented by roasted vegetables, and if you need a more substantial side dish, we suggest mashed potatoes, couscous, or polenta.

In a small bowl, prepare the marinade for seasoning the chicken. Thoroughly mix olive oil, salt, ground pepper, Italian seasoning, balsamic vinegar (or lemon juice), and garlic powder.

Place the chicken fillets in a suitably sized plastic container and pour the prepared marinade over them. Turn the meat several times to ensure it is well seasoned on all sides. Seal the container tightly and refrigerate for at least 30 minutes to allow the meat to absorb the marinade well.

Wash and dry the vegetables. Cut them into roughly equal-sized pieces. Add the chopped vegetables to a larger bowl/container and season them with salt, olive oil, and ground pepper. Mix well to ensure the vegetables are evenly seasoned. You can let the vegetables marinate for a while or prepare them just before baking in the oven.

Before preheating the oven to 200 degrees Celsius, take the marinated chicken out of the refrigerator and let it come to room temperature (about 30 minutes). In a baking dish, first add the seasoned vegetables and spread them around the edges of the dish, then place the marinated chicken fillets in the center. Pour the remaining marinade over the meat, then place the baking dish in the preheated oven for 25-30 minutes. The fillets are done when the meat reaches an internal temperature of 75 degrees Celsius.
