Juicy Chocolate Curd Pastry
A very juicy and tasty pastry that doesnt require a rolling pin, as you simply grate the bottom and top layers of the chocolate dough into the baking dish. Suitable as a dessert with a cup of tea or coffee, or as a pastry served at a picnic, party, celebration, etc.

In a bowl, sift the flour, cocoa powder, a tablespoon of powdered sugar, and baking powder. Mix well and add the diced butter to the mixture. Quickly rub the fat into the dry ingredients with your fingertips, lifting the mixture to make it airy and crumbly. Add the egg yolk and milk, and quickly knead the ingredients with cold hands into a dough. Shape it into a ball, wrap it in plastic wrap, and store it in the freezer for 30 minutes.

While the dough is chilling, prepare the filling. In a bowl, mix the curd, remaining powdered sugar, vanilla sugar, starch, and four egg yolks. Beat the egg whites with a pinch of salt until stiff peaks form, then gently and slowly fold them into the curd mixture in two or three batches.

Preheat the oven to 180 degrees Celsius. Grease a deep rectangular baking dish (25 x 35 cm) well with butter. Grate half of the chocolate dough into the dish. If necessary, spread it evenly with your hands, then evenly spread the curd filling over it. Grate the remaining dough over the filling. Bake the pastry in the preheated oven for 40 to 50 minutes.

Meanwhile, prepare the glaze. Slowly melt the butter in a small pot and mix in the sugar, cocoa powder, and hot water. Stir well to create a smooth glaze, which you pour over the baked pastry. Let the pastry cool completely, then cut it into pieces, serve on a plate or platter, and enjoy.
