Juicy Cottage Cheese Cake with Raisins
A quick, juicy, and very tasty dessert from the rich treasury of simple homemade recipes. The cake is good warm or cold, served with a glass of sweet white wine or a cup of your favorite hot drink. An excellent accompaniment is, of course, compote.

Steps

Sort the raisins, wash them, and place them in a bowl. Pour hot water over them and let them soak for 5 minutes. In another bowl, mix the breadcrumbs and hot milk. Let the mixture stand for 5 minutes, then stir in the sour cream.

Place the cottage cheese in a bowl and mash it with a fork to break it into smaller pieces. Add melted butter and grated lemon zest to the mashed cottage cheese.

Separate the egg whites and yolks into two bowls. Beat the egg whites with a pinch of salt until stiff peaks form. Add regular and vanilla sugar to the egg yolks and mix until you get a light, pale yellow cream. Stir in the cottage cheese and the mixture of breadcrumbs and sour cream. Gently and slowly fold in the beaten egg whites, and finally add the drained raisins.

Lightly grease a rectangular baking dish with butter, then pour in the prepared mixture. Spread it evenly over the entire surface with a spatula or the back of a spoon and smooth the top. Bake the cake in a preheated oven at 200°C for 25 minutes.

After 25 minutes of baking, check how the cake is doing. If the top has only slightly browned, brush it with a mixture of egg yolk and powdered sugar and bake in the preheated oven for another 15 minutes until it turns golden brown. If the cake has already developed a golden brown crust, skip the glaze and bake for another 10 to 15 minutes.

The cake is good warm or cold. Before serving, sprinkle it with powdered sugar and cut it into pieces. Serve with whipped cream or Greek yogurt, and an excellent accompaniment is compote.

Advice
Raisins can also be soaked in rum or orange juice, and instead of raisins, you can use cranberries.
