Ingredients
Dough
-
400 g Flour, Wheat, bread flour
-
1 bag Baking powder
-
2 spoons Cocoa, powdered, unsweetened
-
50 g Sugar, white
-
1 piece Egg, egg yolk, fresh
-
250 g Butter, unsalted
Filling
-
500 g Cheese, cottage cheese
-
1 bag Sugar, white
-
180 g Powdered sugar
-
1 bag Pudding, vanilla
-
2 piece Egg, egg yolk, fresh
-
3 pieces Egg, egg white, fresh
-
1 pinch Salt, table
-
1 can cherries, compote
Steps
-
In a bowl, sift the flour, baking powder, and cocoa. Add sugar and mix the ingredients well. Add the egg yolk and the butter cut into small pieces. Knead the ingredients into a uniform dough, shape it into a ball, wrap it in plastic wrap, and store it in the freezer for one hour.
-
Drain the fruit from the compote well. Cut larger pieces of fruit into smaller chunks if desired. Meanwhile, prepare the filling. Mix the curd with powdered sugar, vanilla sugar, pudding powder, and egg yolks. Beat the egg whites with a pinch of salt into stiff peaks, then gently fold them into the curd mixture in two or three additions using a spatula.
-
Preheat the oven to 180 degrees Celsius. Lightly grease a deep rectangular baking dish (25 x 35 cm) with butter and line it with baking paper. Grate about half of the dough into the bottom of the dish and spread the curd filling evenly on top. Sprinkle the drained fruit over the filling, then grate the remaining dough over the fruit. Bake the pastry in the preheated oven for 40-50 minutes. Once baked, let it cool in the dish.
-
Once cooled, cut the pastry into smaller pieces, serve them on a nice plate or platter, and enjoy.

Advice
Instead of fruit from compote, you can also add raisins soaked in rum to the filling.
