150 g Sugar, white

Grease a narrow, elongated baking pan (approximately 23 x 13 cm) with butter and dust it with flour (remove any excess flour). Sift the flour and baking powder into a bowl. Add lime zest and mix the ingredients well.

In another bowl, add sugar and cubed softened butter. Mix with an electric mixer for a few minutes until you get a light, creamy mixture. Gradually, one by one, mix in the eggs. It’s important that the eggs blend well with the butter mixture.

First, mix in the lime juice, then on low speed, add the dry ingredient mixture. Pour the batter into the prepared baking pan and spread it evenly with a spatula, smoothing the top.

Bake the cake at 180°C (356°F) for 55-60 minutes. The cake is done when it turns golden brown, pulls away from the sides of the pan, and a toothpick inserted into the cake comes out clean.

While the cake is baking, prepare the syrup. In a saucepan, add sugar, tonic, and lime juice. Bring to a boil over medium heat, then cook for another 1-2 minutes until the syrup thickens slightly. Remove from heat and stir in the gin.

Remove the baked cake from the oven. Poke it in several places with a toothpick or wooden skewer and pour the hot syrup over it. Let the cake cool completely in the pan.

Remove the cake from the pan and place it on a nice plate or platter. Make a medium-thick glaze from powdered sugar, gin, and tonic, and pour it over the cake. Finally, decorate with lime slices and lime zest as desired. Serve the prepared dessert.
