Juicy Semolina Dessert "Lebanese Nights"

Pour milk into a thick-bottomed pot and add semolina, sugar, rose water, and salt. Place it on the stove and bring the mixture to a boil over medium heat, stirring occasionally. Then reduce the heat and cook until the mixture thickens and resembles pudding (about 10 minutes).

Remove the pot from the heat and stir in the vanilla extract. Transfer the mixture to a greased round or rectangular baking dish (approximately 22 x 32 centimeters) and spread it evenly over the entire surface using a spatula or spoon. Let the mixture cool while you prepare the cream.

In a bowl, mix milk and starch until smooth. Pour the cream into a pot and add sugar. Bring to a boil, then reduce the heat to medium and slowly pour the milk mixture into the pot while continuously stirring. Cook while stirring until the mixture thickens, then pour the cream over the cooled semolina and spread it evenly over the entire surface. Wait for the cream to cool to room temperature, then cover the dish with plastic wrap and refrigerate the dessert for at least 4 hours.

While the dessert is cooling, prepare the sugar syrup. In a small pot, bring water mixed with sugar, lemon juice, and rose water to a boil. Let the syrup simmer for 5-7 minutes, then remove the pot from the heat and set aside until ready to serve the dessert.

Before serving the dessert, sprinkle the top with coarsely chopped pistachios. Cut it into pieces, place them on plates, drizzle with the prepared syrup, and serve.
