Juicy Semolina Pastry with Raisins
This is an exceptionally good dessert that always turns out well. It is very light, juicy, and flavorful, and so simple to prepare that even those who are not very skilled in the kitchen can handle it. If we are preparing the pastry for a special occasion, we can also add a pinch of chosen spices, and the addition of candied fruit will provide a pleasant twist.

150 g Sugar, white

4 pieces Egg, egg yolk, fresh

1 kg Cheese, cottage cheese

6 spoon Semolina

1 bag Sugar, white

Steps

Preheat the oven to 200 degrees Celsius. Grease a round baking dish (24 to 26 cm in diameter) with butter and dust it with flour (remove any excess flour).

In a bowl with an electric mixer set to high speed, mix the softened butter and sugar. Gradually (one by one) mix in the egg yolks (each yolk should be mixed in for about 30 seconds).

On medium speed, mix in the orange zest, cottage cheese, semolina, and vanilla sugar. Stir in the soaked raisins with a spatula or spoon.

Beat the egg whites together with a pinch of salt into stiff peaks, then gently and slowly fold them into the cottage cheese mixture in two or three batches.

Pour the mixture into the prepared baking dish. Bake the pastry first for 20 minutes at 200 degrees, then lower the temperature to 180 degrees Celsius and bake for another 30 minutes.

Let the baked pastry cool completely in the baking dish. Once cooled, dust it with powdered sugar and cut it into pieces of any size. Serve on plates and enjoy.

Advice
Instead of orange zest, you can use lemon zest, and rum can be replaced with orange or apple juice if desired.
