Juicy Walnut Crescents
Crescents are a popular homemade pastry that we love to prepare during the holiday season. They are usually topped with lemon or rum glaze, but Goraz Potočnik decided to go for an interesting combination of fig jam and meringue with nuts.

Ingredients

240 g Butter, unsalted

5 spoon Sugar, white

5 pieces Egg, egg yolk, fresh

350 g Wheat flour, white, multi-purpose

1 piece Baking powder

5 pieces Egg, egg white, fresh

240 g Powdered sugar

150 g Walnuts

200 g Pistachio

400 g Figs, fresh
Steps

Cream the softened butter and half of the powdered sugar until smooth. Gradually mix in the egg yolks while continuously stirring.

Sift the flour into a bowl and mix it with baking powder. Make sure both ingredients are well combined. Add the dry mixture to the butter mixture in two or three parts, mixing until you get a smooth dough without lumps. Stop mixing once the dough is smooth.

Beat the egg whites with the powdered sugar until stiff peaks form. Gently and slowly fold in the ground walnuts and pistachios using a hand whisk.

Preheat the oven to 170 degrees Celsius. Line a baking tray with parchment paper and spread the dough evenly over it. Smooth the top with your palm. First, spread the fig jam over the dough, then top it with the meringue and nut mixture. Place the tray in the preheated oven for 25 to 30 minutes.

Remove the tray from the oven and let the pastry cool slightly. While still warm, use a mold to cut out crescents. Arrange the crescents on a plate and let the edges dry.
