Juicy Walnut Pastry

Ingredients
Biscuit

4 pieces Egg, fresh

2 cups Sugar, white

1 cup Milk, whole milk

1 cup Oil, vegetable oil, canola

1 cup Wheat flour, white, multi-purpose

1 cup Semolina

2 cups Walnuts

- 1 handful Walnuts
Syrup

600 ml Water

2 cups Sugar, white

0.5 piece Juice, lemon

First, prepare the syrup. Place a pot with water and sugar on the stove. Slowly bring the mixture to a boil over medium heat. Let the syrup boil for 5 minutes, then add the lemon cut into rings. Boil for another 1 to 2 minutes, remove from heat, and let the syrup cool to room temperature.

While the syrup is cooling, prepare the walnut sponge. In a bowl, mix the eggs and sugar with a hand whisk. First, add the wet ingredients (milk and oil) to the egg mixture, then the dry ingredients (breadcrumbs and flour). Finally, mix in the walnuts.

Grease a deep rectangular baking dish (36 x 23 cm) with butter and dust it with flour (remove any excess flour). Pour the prepared mixture into the dish and spread it evenly. Bake the sponge in a preheated oven at 180 degrees Celsius for about 35 minutes. It is done when the top turns a nice golden brown.

Remove the baking dish from the oven and pour the cooled syrup over the hot sponge. Decorate it with walnut kernels and let it cool completely. Once cooled, cut the pastry into smaller pieces and serve.
