Jurčkov Carpaccio
The author of the recipe, Mitja Humar, competed for the win in the second season of the show Gostilna išče šefa. He won over the audience with his sense of humor and also proved in the show that he is very skilled in the kitchen. The smiling 30-year-old from Dobrovo in Goriška Brda says that cooking for him means a profession, a hobby, and a good excuse not to do the dishes. He shared with us a recipe for preparing a simple cold appetizer.

400 g Mushrooms, mauve

Wash the arugula, dry it, and spread it on a plate. Cut off the root of the radishes and remove any remaining soil. It is important not to wash them. Slice them into 1 to 2 mm thick slices and place them on the arugula. Add grated Parmesan and season with pepper and salt.

Prepare a dressing by mixing 1/3 olive oil, 1/3 pumpkin seed oil, and 1/3 balsamic vinegar. Pour the dressing over the prepared appetizer and serve immediately.

Advice
Instead of balsamic vinegar, you can use balsamic glaze, and arugula can be replaced with lambs lettuce.
