Khachapuri
Khachapuri, a traditional Georgian stuffed bread, which in appearance and shape closely resembles pizza, is a very simple yet incredibly tasty dish. The most common version is round in shape and filled with sulguni, a young Georgian cows cheese. The dish is usually served as a snack for a larger group, but it also works excellently as a standalone main course or as a side dish to meat, stews, soups, etc. This dish, which is even more popular than pizza in Georgia, is a must-try.

Ingredients
Dough

500 g Wheat flour, white, multi-purpose

1 dl Water

1 bag Yeast, dry

1 dl Milk, whole milk

1 piece Egg, fresh

1 teaspoon Salt, table

pieces Oil, vegetable oil, canola

300 g Cheese, cottage cheese
Steps

In lukewarm water, smoothly mix the yeast and one tablespoon of flour. Let it stand for 10 minutes. Beat the egg and mix it with the milk.

In a larger bowl, sift the flour and make a well in the center. Sprinkle salt around the flour near the well, and pour the yeast mixture, oil, and the milk and egg mixture into the well. Mix well with your fingers until the ingredients come together. Once you have a rough dough, knead it well on a floured work surface until it becomes completely smooth, elastic, and pliable, and does not stick to your hands or the work surface.

Divide the kneaded dough into two parts. Take one part and shape it into a circle, about 20 to 25 cm in diameter. Spread half of the cheese over the dough, leaving a 2 to 3 cm empty edge, which you fold over the filling and press together well in the center (forming a kind of pouch). Gently flatten and stretch the stuffed bread with your fingers. Prepare the other part of the dough in the same way.

Bake the khachapuri in an oven preheated to 230 degrees Celsius for 8 to 10 minutes.
