Kisir
Somewhat reminiscent of tabbouleh, but more seasoned. It is made from fine bulgur, parsley, tomato paste, and spices. Try it!

1.5 cups Bulgur

1 piece Onion, raw

3 pods Garlic, fresh

2 spoons Tomato sauce, without salt

0.5 bouquet Parsley, fresh

Steps

Place a pot of water on the stove and wait for it to boil. Pour the bulgur into a large bowl and add 3 cups of boiling water. Cover the bowl and let it sit for 20 minutes to allow the grains to absorb the water.

Peel and finely chop the onion and garlic. Clean, wash, and finely chop the green onion. Wash, shake dry, and chop the parsley.

Mix the onion, garlic, oil, tomato paste, and lemon juice into the bulgur. Mix well, then add the herbs, mix again thoroughly, and finally add the spices. Mix everything together once more. Transfer the kisir into a round bowl and press the ingredients firmly into the bowl to shape the dish.

Arrange washed green lettuce leaves on a plate and place the kisir on top. Let it cool slightly in the refrigerator before serving.
