Kljukuša
Traditional dishes carry memories of childhood and carefree times. One such dish is kljukuša, a traditional Balkan dish that is prepared slightly differently in almost every village. In this simple dish, we taste juicy chicken and crispy soft dough, with sour cream adding freshness. If we add a seasonal salad on the side, we get a tasty and inexpensive lunch.

Ingredients
Chicken thighs

350 g Flour, Wheat, bread flour

90 g Sour cream

2 piece Egg, fresh

1 dl Yogurt, plain, from whole milk

Steps

Wash the chicken and dry it with paper towels. Season the pieces with salt, pepper, and sweet paprika. Add two tablespoons of oil, mix everything well, and let the pieces marinate for half an hour. If the meat is marinated overnight, it will be even more flavorful.

Mix the remaining ingredients, namely flour, sour cream, eggs, milk, yogurt, and water, into a smooth dough, adding a teaspoon of salt.

Grease a baking dish with oil, then place it in the oven preheated to 250 degrees Celsius. Let the dish heat up well in the oven.

Pour the prepared dough into the hot baking dish and smooth it out slightly, then arrange the marinated chicken pieces on top. Pour the marinade or oil from the marinade over the chicken pieces.

Return the dish to the oven and bake the kljukuša for 20 minutes at 250 degrees Celsius, then reduce the temperature to 200 degrees and bake for another 25 minutes.

Once the kljukuša is baked, remove the dish from the oven and place a piece of butter on each chicken piece. Lightly pour milk over the baked dough (1 dl will be enough). Turn off the oven and push the dish back in for another 10 minutes. Garnish the kljukuša with sour cream before serving.

Advice
The chicken pieces do not need to be pre-baked. The 45 minutes that the kljukuša bakes in the oven will be just enough for the dough to become crispy and the meat to be cooked and juicy.
