Ingredients

0.5 kg Kohlrabi, raw

2 piece Carrot, fresh

1 spoon Tomato, concentrate

2 pod Garlic, fresh

Steps

Peel the kohlrabi, wash it, and cut it into smaller pieces. Pour water into a pot and bring it to a boil. Add the kohlrabi to the boiling water for one minute, then remove the pot from the heat and drain the kohlrabi. Peel the garlic and finely chop it.

Peel the carrots, wash them, and cut them into slices. Add the drained kohlrabi, carrots, garlic, and tomato paste to the pot. Season with salt and add water. Place the pot on the stove and cook over moderate heat for 30 minutes.

Transfer half of the soup (the liquid and cooked vegetables) to a blender and blend until smooth, then pour the mixture back into the pot and stir. Serve the soup in deep bowls and garnish with fresh parsley if desired.
