Ladies Whims
A classic, perhaps slightly forgotten recipe that will surprise you with its excellent taste and the preparation process. The egg whites are not mixed into the batter for the sponge cake; instead, they are used to create a snowy white cap. Ground walnuts or hazelnuts and any marmalade add the finishing touch.

4 pieces Egg, fresh

50 g Sugar, white

100 g Butter, unsalted

1 dl Yogurt, plain, from whole milk

1 piece Lemon, fresh, without shell

200 g Flour, Wheat, bread flour

6 g Baking powder

100 g Powdered sugar

300 g Marmalade, orange

100 g Walnuts
Steps

Preheat the oven to 180 degrees Celsius. Line a baking dish (25 x 20 cm) with baking paper.

Melt the butter and separate the egg yolks from the whites into two bowls. Add 50 g of sugar to the yolks and beat until the mixture doubles in volume, then mix in the melted butter or oil, yogurt, and grated lemon zest.

In a separate bowl, mix the flour and baking powder. Add this mixture to the yolk mixture, pour into the baking dish, smooth the surface, and bake in the preheated oven for 15 minutes.

Meanwhile, beat the egg whites. Gradually add powdered sugar and a few drops of lemon juice while beating to create a shiny meringue.

When the sponge cake is removed from the oven, reduce the temperature to 120 degrees Celsius.

Spread marmalade over the sponge cake, sprinkle half of the ground walnuts or hazelnuts on top, and then spread the meringue over it, shaping it as desired.

Sprinkle the remaining ground walnuts or hazelnuts on top and bake in the preheated oven for another 40 minutes, until the meringue is lightly browned.

Allow the dessert to cool completely before cutting it into pieces.
