Lamb Chops with Orange Sauce

Ingredients

4 pieces Meat, lamb, fillet

2 pod Garlic, fresh

5 spoon Oil, olive

2 piece Shallot

125 ml Soup base, beef, cube

125 ml Alcohol, Wine, White

1 spoon Spices, thyme, dried

3 spoons Marmalade, orange

2 piece Orange, fresh

4 pinch Salt, table

2 pinch Spices, pepper, black
Steps

Wash the chops, dry them well with a paper towel, and lightly pound them. Peel the garlic and crush it with a knife. In a bowl, mix the oil and garlic, then dip the chops into the prepared mixture. Cover the bowl and store it in the refrigerator overnight. You can turn the chops a few times while marinating.

Peel the shallots, wash them, and finely chop them. Place a pan on the stove and heat it well. Take the chops out of the marinade and place them in the pan. Cook them for 5 minutes on each side. Once cooked, set them aside on a plate and cover to keep them warm.

In the same pan where the chops were cooked, add the shallots and sauté until they become translucent. Pour in the broth and white wine, sprinkle with thyme, mix well, and bring to a boil. Reduce the heat, stir in the marmalade, and simmer for another 5 minutes.

Thoroughly wash and very thinly peel the oranges. Cut the peel into thin, long strips. Then fillet the oranges and slice them into thin rounds. Place the orange rounds at the bottom of the plates, lay the chops on top, season with salt and pepper, garnish with the peel strips, and pour the sauce over them. Serve the prepared dish with your chosen side.

Advice
If youre not skilled at filleting an orange, you can skip this step and simply serve the chops on plates and pour the sauce over them.
