Ingredients
-
16 pieces Meat, lamb, ribs
-
3 pieces Chili peppers, green chili, fresh
-
3 dl Alcohol, Wine, Red
-
3 pods Garlic, fresh
-
2 spoons Spices, ginger, ground
-
1 spoon Spices, cumin, seeds
-
1 teaspoon Spices, coriander - seeds
Steps
-
Wash the chops and pat them dry with a paper towel. Also wash the green chili, remove the seeds, and slice it into rings. Blend all the ingredients (green chili, wine, garlic, ginger, cumin, coriander, and salt) using a hand blender or food processor. Strain the sauce through a fine sieve and store the strained sauce.
-
Arrange the chops in a fireproof dish and pour the sauce over them. Cover the dish and refrigerate for eight hours (the meat needs to absorb the flavors).
-
Preheat the oven to 180 degrees Celsius. Take the fireproof dish out of the refrigerator, cover it with foil, and place it in the hot oven. Bake for 50 minutes until the meat becomes tender.
-
Remove the foil and bake for another 10 minutes to allow the meat to develop a crispy crust. Serve on plates with four chops per person, and drizzle with the sauce that formed during baking.
