Lamb Pie
This pie is a self-sufficient meal, all it needs is a glass of good drink. Juice or wine will be the perfect complement.

Ingredients
Dough

200 g Wheat flour, white, multi-purpose

100 g Butter, unsalted

Filling

200 g Meat, lamb, fillet

3 spoons Oil, olive

2 spoons Tomato, concentrate

125 g Cheese, edamame

1 pinch Spices, pepper, white

1 teaspoon Rosemary, fresh

Steps

Sift the flour onto a board, distribute the cubed butter and salt over it. Make a well in the center and pour in the water. Quickly knead all the ingredients into a crumbly dough. Shape the dough into a loaf, wrap it in food wrap, and let it rest in the refrigerator for two hours (or at least one hour).

Coarsely grate the cheese, wash the lamb, and cut it into smaller pieces. In a small bowl, whisk together the eggs, sour cream, and pepper. Add the grated cheese to the mixture.

Preheat the oven to 200 degrees Celsius. Grease a pie mold with a diameter of 26 cm with butter and lightly dust it with flour. Roll out the dough on a clean, floured surface to about 0.5 cm thick and line the bottom and sides of the mold with it. Prick the bottom several times with a fork.

Pour olive oil into a pan and fry the lamb pieces. Stir while frying to ensure the pieces brown evenly. Add tomato paste and salt, pour in water, and cover the pan with a lid. Simmer on moderate heat for 15 minutes, then remove the pan from the heat. Spread the lamb with the sauce over the dough and pour the mixture of eggs, cheese, and cream over it. Sprinkle rosemary and sesame seeds on top. Bake the lamb pie in the middle of the oven for 30 minutes.

Once the pie is baked, take it out of the oven and let it cool for a few minutes. Then remove it from the mold, transfer it to a larger serving plate, cut it, and serve.

Advice
The pie can also be made with yeast dough. Lamb meat can be substituted with beef or pork if desired. The meat can also be seasoned to taste (e.g., with thyme, rosemary…).
