Lamb Rib Roast with Herb Crust

Ingredients

7 pieces Carrot, fresh

5 spoon Oil, olive

1 kg Meat, lamb, ribs

1 bouquet Parsley, fresh

1 bouquet Thyme, raw

2 twigs Basil, fresh

6 slice Bread, wheat

1 spoon Mustard

1 teaspoon Salt, table

2 pinch Spices, pepper, black
Steps

Preheat the oven to 240 degrees Celsius. Peel the carrot, thoroughly wash and dry the basil, parsley, and thyme. Remove the basil leaves from the stems.

Place a large pan on the stove and heat the oil. Add the lamb rib roast, placing it fat side down. Roast for about 6 minutes until the fat is well browned, then remove the pan from the heat and let the meat cool.

Crumble the white bread and place the pieces into a food processor. Add the herbs and mustard, then mix everything together until you get a smooth mixture. Prepare a baking dish by greasing it well, then place the rib roast inside with the fat side up. Use your hands to spread the herb mixture over the fatty part of the lamb to create a crust.

Place the carrots in the baking dish as well, then drizzle everything with a little oil and season with pepper and salt to taste. Put the baking dish in the oven for 40 minutes.

Once the rib roast is cooked, cut it into two pieces (four ribs each) and serve it with the carrots on plates.
