Lamb Ribs in Marinade with Olives
If you want to spice up the variety of dishes you usually prepare on the grill, lamb ribs are more than a welcome choice. The meat is quickly grilled, and at the same time, you can also play around with different marinades to coat the meat before grilling. One of the better options is definitely a marinade made from mustard, balsamic vinegar, olive oil, and garlic.

Ingredients

1.5 kg Meat, lamb, ribs

2 pinch Salt, table

1 pinch Spices, pepper, black

3 spoons Oil, olive

2 spoons Mustard

2 spoons Vinegar, balsamic

8 pods Garlic, fresh

1 handful Olives, green, in brine

1 handful Basil, fresh
Steps

In a bowl, mix olive oil, balsamic vinegar, stone-ground mustard, and crushed garlic cloves. Wash the meat and dry it thoroughly with paper towels. Make shallow cuts on the surface of the meat on both sides. Season the meat with salt and pepper, then place it in the bowl with the marinade. Rub the marinade into the meat with your hands, then cover the bowl and let the meat marinate for at least 10 minutes.

While the meat is marinating, heat the grill. Remove the meat from the marinade and discard the garlic. Place the meat on the hot grill grate. Grill it for 5 minutes on each side, then transfer it to a plate and let it rest in a warm place.

Pour the marinade into a pan. Add halved olives and cook over moderate heat for a few minutes. At the end, add chopped basil to the sauce and mix in the juices that have drained from the meat.

Serve the grilled ribs on plates, pour the sauce over them, and offer with a side dish of your choice.
