Ingredients

600 g Meat, lamb, ribs

2 teaspoons Spices, cumin, seeds

1 teaspoon Spices, coriander - seeds

1 teaspoon Spices, cinnamon, ground

1 teaspoon Spices, paprika

2 pinch Spices, pepper, black

200 ml Alcohol, Wine, Red

50 g Sugar, brown

200 g Red currant, fresh

2 spoons Oil, plant, sunflower
Steps

Rinse the meat under running water and dry it with a paper towel. In a bowl, mix all the spices together and rub the meat with the spice mixture. Wash and clean the currants. Save a few sprigs for decoration, and remove the rest of the currants from the stems.

Place a saucepan on the stove and add wine, sugar, and the remaining spice mixture. Also add the currants to the saucepan. While gently stirring, bring the contents to a boil over moderate heat, then reduce the temperature. Simmer on low heat for an additional 15 minutes to thicken the sauce.

Place a larger frying pan on the stove and heat the oil. Place the lamb ribs on the hot oil and cook them on high heat for 8 minutes. Turn them once during cooking.

Serve the cooked ribs on plates and accompany them with the sauce. You can also pour the sauce over the meat. Garnish with the saved red currant sprigs. As a side dish, you can offer potatoes or roasted mushrooms.
