Lamb Snails with Green Beans

4 pieces Meat, lamb, fillet

2 spoons Parsley, fresh

3 pods Garlic, fresh

4 spoon Oil, olive

0.5 teaspoons Spices, nutmeg, ground

2 spoons Lemon, fresh, without shell

2 pinch Salt, table

1 pinch Spices, pepper, black

1 teaspoon Spices, rosemary, dried

2 spoons Tomato sauce, without salt

1 dl Water

400 g Green beans, fresh
Steps

Rinse the fillets and dry them with a paper towel. Wash the parsley, finely chop it, and place it in a bowl. Peel the garlic, chop it, and add it to the bowl. Add a teaspoon of olive oil, ground nutmeg, then zest a lemon and add a tablespoon of lemon juice to the bowl. Season the herbs with salt and pepper and add rosemary. Mix well and spread the mixture on one side of the fillet.

Roll the fillets into snails and secure them with a wooden skewer. Pour oil into a larger pan and cook the snails over moderate heat for 15 minutes. Then turn them over and cook on the other side. Add water and cover the pan with a lid. Cook for another 15 minutes. After this time, transfer the snails to a plate, add tomato concentrate to the sauce, mix well, and season with salt. Cook over high heat until the sauce has almost evaporated and only enough remains to cover the bottom.

Place the lamb snail on a plate, serve green beans alongside, and garnish the plate with drops of the sauce.
