180 g Wheat flour, white, multi-purpose
Steps

Clean and wash the fresh vegetables. Finely chop the onion and garlic separately. Cut the carrot and parsley root into smaller pieces, and slice the leek into rings or strips.

Place a pot on the stove and add oil. Quickly brown the meat in the hot oil. Add the onion, carrot, and parsley root, and sauté the ingredients for 3-4 minutes while stirring. Add the garlic, leek, and thyme. Sauté for another minute, then deglaze with wine.

Wait until the wine has almost completely evaporated, then add water. There should be enough water to cover the ingredients by about 2 centimeters. Season with salt and ground pepper. Cover the pot and let the stew simmer on medium heat for 50-60 minutes.

After about 30 minutes of cooking, add frozen green beans and peas to the pot. If necessary, halve the broccoli florets and wait a bit before adding them to the pot.

Prepare the dumpling batter. In a small bowl, crack an egg and whisk it well with a fork. Add salt, oil, and water, and mix everything thoroughly to form a uniform mixture. Gradually add flour to create a smooth and medium-thick batter. Let it rest for 15 minutes.

Add more water to the stew pot if needed and wait for the liquid to boil again. Dip a spoon into the hot broth, then scoop up the prepared batter and add it to the pot. Repeat the process until all the batter is used. Wait for the dumplings to float to the surface, then cook them for about 5 more minutes. Add the broccoli during the last 5 minutes of cooking.

Before serving, adjust the seasoning of the stew with additional salt and/or pepper if needed. Serve the prepared dish on plates and enjoy immediately.

Advice
If desired, the dumplings can also be cooked separately in salted water. Once cooked, remove them with a slotted spoon and add them to the stew pot.
