Lasagna with Zucchini
Zucchini is a versatile vegetable. It can be used to make excellent soups, pancakes, fritters, layered dishes, sweet and savory cakes, and much more. This time, we offer you a recipe for a very tasty meatless lasagna.

Ingredients

9 pieces Pasta, noodles, fresh

2 spoons Oil, olive

1 piece Onion, raw

700 g Small pumpkins

3 pods Garlic, fresh

250 g Cheese, ricotta

200 g Cheese, mozzarella

300 ml Tomato sauce, without salt

0.75 teaspoons Salt, table

2 pinch Spices, pepper, black

Preheat the oven to 220 degrees Celsius. Bring water to a boil in a large pot. Cook the lasagna sheets in the boiling water for about 5 minutes to soften them. Remove the sheets from the pot and place them in a bowl. Drizzle each sheet with a few drops of oil to prevent them from sticking together.

Wash the zucchini, clean them, and coarsely grate them. Peel the onion and garlic, and finely chop them. Heat olive oil in a large pan. Add the onion and sauté for 3 minutes, stirring occasionally. Then add the grated zucchini and garlic, and sauté for another 2 to 3 minutes until the zucchini softens. Stir in 2/3 of the ricotta and 2/3 of the grated mozzarella. Remove the pan from the heat and season the zucchini mixture with pepper and salt to taste.

Heat the tomato sauce in a small pot. Assemble the lasagna in a deep baking dish: spread half of the zucchini mixture on the bottom of the dish and cover it with lasagna sheets. Spread half of the tomato sauce over the sheets. Repeat the process once more. Top the lasagna with the remaining ricotta and mozzarella.

Bake the lasagna in the preheated oven on the upper rack for 10 to 15 minutes, until the cheese melts and turns golden brown. Remove the baked lasagna from the oven, let it rest for a few minutes, then slice and serve.
