Lava Cake (Lava Torticia)

Ingredients

250 g Egg, fresh

100 g Egg, egg yolk, fresh

125 g Sugar, white

250 g chocolate, dark

250 g Butter, unsalted

50 g Wheat flour, white, multi-purpose

Steps

Thoroughly grease the round molds with butter and dust them with flour (remove any excess flour).

In a mixing bowl, add the eggs, egg yolks, and sugar. Beat the ingredients with a mixer until you get a light and fluffy, pale yellow mixture, with traces of the beaters visible. Meanwhile, melt the butter and chocolate over a water bath.

Slowly pour the beaten egg yolks into the melted chocolate. Mix until you get a smooth cream. Add the sifted flour and gently fold it in with a spatula to achieve a uniform mixture.

Fill the molds 2/3 full with the chocolate mixture and place them in the oven preheated to 180 degrees Celsius for exactly 9 minutes.

When you take the lava cakes out of the oven, dip the molds in a cold water bath for 30 seconds. Then, invert the cakes onto plates and serve immediately.
