Layered Dish with Sauerkraut, Bacon, and Cream

Ingredients

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

500 g Sauerkraut

1 dl Alcohol, Wine, White

120 g Meat, pork, smoked bacon

2 piece Egg, fresh

250 g Sour cream

2 spoons Parsley, fresh

400 g Dough, puff

90 g Cheese, Gouda
Steps

Rinse the sauerkraut under running water. Let it drain well, then chop it finely.

Peel the onion, chop it finely, and sauté it in 1.5 tablespoons of oil. Add the sauerkraut and sauté it together with the onion for 1-2 minutes while stirring. Season with salt and ground pepper to taste, pour in the wine, and cook over moderate heat for about 30 minutes or until most of the liquid evaporates.

Cut the bacon into pieces and fry it until crispy in a preheated pan. Add the fried bacon along with the fat that was released during frying to the cooked sauerkraut. Mix well and set aside.

In a bowl, mix the eggs and sour cream. Stir in the chopped parsley.

Grease a deep baking dish (22 x 26 cm) with the remaining oil. Divide the puff pastry into four pieces and roll them out on a lightly floured surface to the size of the baking dish (they should be large enough to cover the bottom of the dish).

Place a piece of rolled-out pastry in the greased baking dish and spread a third of the sauerkraut over it. Pour a little of the egg mixture over it and sprinkle with a bit of grated cheese. Repeat the process two more times. Finish the layering with the pastry, spreading the remaining egg mixture over it. Sprinkle the top of the dish with the remaining grated cheese.

Bake the dish first for 10 minutes at 200°C, then reduce the temperature to 180°C and bake for about 30 minutes more, until the top is golden brown and crispy. Serve warm or cold.
