LCHF Almond Cookies with Dark Chocolate Chunks
Cookies for everyone who has eliminated gluten from their diet, as well as for those following a post-December or any other diet. Instead of regular sugar, we used erythritol, and the chocolate should contain at least 70% cocoa.

Ingredients

100 g Nuts, almonds, blanched

50 g chocolate, dark

2 spoons Sugar, turbinado

1 pinch Salt, table

pieces Baking powder

2 spoons Oil, plant, coconut

1 teaspoon Vanilla, extract, natural

Preheat the oven to 160 degrees Celsius. Chop the dark chocolate into chunks.

In a bowl, thoroughly mix all the dry ingredients: almond flour, erythritol, chocolate, salt, and baking soda. Add the wet ingredients and mix until you get a uniform dough.

Line a baking tray with parchment paper. Divide the dough into nine equal parts, taking about a tablespoon of mixture for each. Shape the portions into balls, flatten them with your palms, and shape them further if needed.

Bake the cookies in the preheated oven for 10 minutes. Let them cool completely before serving to ensure they become firm.
