Leek Pie with Cheese
If you enjoy the taste of leeks, you will be delighted by this excellent and very juicy meatless pie. It is perfect as a standalone dish, enjoyed with a bowl of salad.

Ingredients
Dough

200 g Wheat flour, white, multi-purpose

Steps

Sift the flour into a bowl and mix it with salt. Cut the butter into cubes and scatter them over the flour. Using your fingertips, rub the fat into the dry ingredients while lifting the mixture to make it airy and crumbly. Add the sour cream, quickly knead the mixture, then add enough cold water to bind the ingredients into a dough. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 190°C (375°F). Grease a round pie dish (25 cm in diameter) with butter. Roll out the dough on a lightly floured surface into a circle approximately 30 cm in diameter and 0.6 mm thick. Transfer the dough to the pie dish using a rolling pin and gently press it against the bottom and sides (trim any excess dough). Prick the bottom of the dough several times with a fork, then cover it with a piece of parchment paper and spread dry beans (baking beads) over it. Bake the dough in the preheated oven for 15 to 20 minutes, until it turns golden brown and is partially baked. Let the dough cool.

While the dough is baking, prepare the filling. Clean the leeks, halve them lengthwise, wash them, and slice them. Melt butter in a large pan and sauté the sliced leeks. Season lightly with pepper and salt. Once they soften and turn golden, remove from heat and let cool.

In a bowl, whisk together the eggs, cream, milk, salt, pepper, and nutmeg until smooth. Spread the sautéed leeks over the dough base, sprinkle with grated cheese, and pour the egg mixture over it. Bake the pie at 180°C (350°F) for 40 to 45 minutes, until the filling is firm to the touch and the top is golden brown. If the crust browns too quickly, cover the pie with a piece of aluminum foil (parchment paper).

Let the baked pie cool slightly, then cut it into desired-sized pieces and serve. A salad pairs wonderfully with it.
