Leek with Bacon and Potatoes
A very quick and simple meal that everyone will enjoy, even those who are not particularly fond of leeks. This dish is especially appreciated by Parisians.

Ingredients

500 g Potatoes, white

250 g Leek

1 piece Onion, raw

80 g Meat, pork, smoked bacon

30 g Flour, Wheat, bread flour

60 g Butter, unsalted

4 pinch Salt, table

1 pinch Spices, pepper, black

1 pinch Spices, nutmeg, ground

1.5 dl Milk, whole milk

1.5 dl Soup base, beef, cube

Wash the potatoes thoroughly and peel them if necessary. Remove the bad green leaves from the leeks and wash them thoroughly (check between the leaves for any traces of soil). Slice the leeks into thin rings. Peel the onion, wash it, and chop it finely. Cut the bacon into small cubes.

Place the potatoes in a pot with salted cold water and set it over moderate heat. Wait for it to boil, then cook for another 15 to 20 minutes. If the potatoes are done, check with a thin, sharp knife. Drain the cooked potatoes, let them cool slightly, and peel them.

Place a pot on the stove and melt half of the butter in it. Add the leeks to the melted butter and quickly sauté them. Then lightly salt the leeks and cover the pot. Simmer the leeks over low heat for 10 minutes, stirring occasionally to prevent them from sticking to the bottom of the pot.

Mix the milk and broth base in a saucepan and stir well. Place a large deep pan on the stove and melt the remaining butter in it. Sauté the bacon in the melted butter. Add the onion and flour, stir, and lightly brown everything. Then slowly pour in the liquid while stirring. Use a whisk to make the sauce smooth. Cover the pan and reduce the heat. Simmer the sauce slowly for another 10 minutes, then season with salt, pepper, and nutmeg.

Add the potatoes and leeks to the pan, mix well, and cook for a few more minutes while stirring to ensure the flavors blend well and all ingredients are evenly heated. Taste the dish, adjust the seasoning if necessary, plate it, and serve.

Advice
Its even better to steam the leeks for 10 minutes. Vegetables cooked this way retain more nutrients and flavor.
