Lemon-Almond Cake without Flour

Preheat the oven to 180 degrees Celsius. Grease a round cake pan (20 cm in diameter) well with butter.

In a bowl with an electric mixer, first cream the softened butter and sugar. Then gradually mix in the eggs one by one. Each time you add an egg, mix well to achieve a uniform batter. Once all the eggs are mixed in, add the ground almonds, mashed potatoes, lemon zest, and baking powder.

Pour the batter into the prepared pan. Use a spatula or the back of a spoon to spread it evenly and smooth the top. Place the pan in the preheated oven for 40 to 45 minutes. The cake is done when the surface turns golden brown, and a toothpick inserted into the cake comes out clean.

Remove the baked cake from the oven and let it cool in the pan for 10 minutes. Then remove it from the pan and place it on a wire rack. Sift powdered sugar into a bowl and mix it smoothly with lemon juice. Pour the lemon glaze over the still warm cake. Allow the cake to cool completely and the glaze to set.

Advice
