Ingredients

Steps

Preheat the oven to 175 degrees Celsius. Grease a baking pan (approximately 33 x 23 cm) well with butter. In a bowl, mix the flour, powdered sugar, brown sugar, and salt. Sprinkle the cold butter cubes over the mixture. Use your fingertips to work the fat into the dry ingredients until a crumbly mixture forms. Spread the mixture evenly over the bottom of the greased baking pan and press it firmly with your palm to create a layer of dough about 1.5 cm thick. Bake the dough in the preheated oven for 20 minutes, until it turns golden brown.

While the dough is baking, prepare the lemon custard. In a bowl, mix the flour, sugar, and salt. A few minutes before the dough is done baking, add the lemon juice, orange juice, and lemon zest to the dry mixture. Then add the eggs, egg yolks, and cream, and mix everything well with a hand mixer until you get a smooth mixture without lumps. If desired, strain the custard through a fine sieve.

Once the dough is baked, remove it from the oven and pour the custard over it. Reduce the oven temperature to 160 degrees Celsius. Return the pan to the oven for another 20 to 25 minutes, until the lemon custard sets nicely.

Remove the baked pastry from the oven and let it cool at room temperature for about 1 hour. Then cover the pan with plastic wrap and refrigerate for 1.5 to 2 hours (or overnight).

Cut the cooled pastry into pieces of your desired size, place them on a plate or platter, dust with powdered sugar, and serve.

Advice
It is best to use organic citrus fruits, whose peel is not treated with pesticides. If organic citrus fruits are not available, immerse the fruits in boiling water for a few minutes, then wipe them thoroughly to remove the wax, which contains toxins. Given that we use a lot of lemon juice to prepare the filling, the amount of sugar added is also appropriate. If you do not want the dessert to be too sweet, add the sugar to the filling gradually.
