Ingredients

170 g Breadcrumbs, dried

60 g Sugar, brown

1 teaspoon Lemon zest, fresh

125 g Butter, unsalted

500 g Cheese, creamy

200 g Sugar, white

250 ml Sweet cream

3 spoons Juice, lemon

2 teaspoons Lemon zest, fresh

1 teaspoon Gelatin powder, unsweetened
Steps

Melt the butter in a small pot. Remove the pot from the heat and let the butter cool slightly. In a food processor, finely grind the cookies and sugar. Transfer the ground cookies to a bowl and mix them with lemon zest. Combine everything with the melted butter. Line the bottom of a 23 cm diameter cake pan with the cookie mixture, pressing it down with your hands (or the back of a spoon). Store the pan in the refrigerator.

Mix the gelatin with a few tablespoons of cold water in a small bowl. Let it sit for 10 minutes to allow the gelatin to swell. In a large bowl, using an electric mixer set to medium speed, mix the cream cheese and sugar. While continuously mixing, add half of the cream (125 ml), lemon juice, and lemon zest.

Heat the remaining cream (125 ml) in a small pot. Just before the cream boils, remove the pot from the heat and mix in the gelatin. Stir until the gelatin is completely dissolved. Mix the gelatin and cream mixture into the cream cheese, cream, and lemon mixture.

Pour the prepared cream over the cookie base. Gently shake the pan to evenly distribute the cream. Store the pan in the refrigerator for about 5 to 6 hours to allow the cake to cool and set completely.

Carefully remove the chilled cake from the pan and place it on a large cake plate. Cut the cake into desired-sized pieces, serve on plates, and enjoy.

Advice
The cheesecake can be decorated with lemon zest or candied lemon peel. It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes, then wipe it well to remove the wax containing toxins.
