Lightly grease a springform pan (20 cm in diameter) with butter, then line the bottom and sides with parchment paper. Slowly melt the remaining butter in a saucepan over low heat. Once the butter has melted, remove the saucepan from the heat and let it cool slightly. In a food processor, finely grind the cookies. Transfer the ground cookies to a bowl and mix them with the melted butter. Press the cookie mixture firmly into the bottom of the pan using your hands or the back of a spoon. Store the pan in the refrigerator.

In a bowl, thoroughly mix the mascarpone, lemon juice, and lemon cream with a spatula. Mix until a smooth cream forms. Taste the cream and add powdered sugar if needed.

Spread the lemon cream evenly over the cooled cookie base. Smooth the top with the back of a spoon or a spatula. Store the pan in the refrigerator for another 4 hours to allow the lemon cream to set.

Once the cream has set, remove the pan from the refrigerator. Carefully remove the cake from the pan and serve it on a large plate or platter. Cut the cake into slices of desired size, serve on plates, and enjoy.

Advice
