Turn on the oven and set it to 190 °C. Cream the softened butter and sugar until fluffy. Use an electric mixer set to medium speed. Mix for 3 minutes until the mixture becomes light and fluffy. Add the eggs, one at a time, and mix until you get a uniform mass.

Mix in the ricotta, lemon juice, and zest. Add the dry ingredients and mix everything well with a hand whisk.

The prepared dough is very soft. Line a baking sheet with parchment paper and spoon the dough onto it in uniform intervals. Bake the cookies in the preheated oven for 15 minutes.

While the cookies are baking, prepare the glaze: in a small pot, add water, sugar, and lemon juice. Place the pot on the stove and cook until the sugar dissolves and the liquid starts to boil slightly. Remove the pot from the heat and let the glaze cool slightly.

Cool the baked cookies on a rack, then spread the glaze over them. Wait for the glaze to set. Arrange the cookies on a serving plate and serve.

If you cant bake all the cookies at once, bake them in batches or use multiple baking sheets to distribute the dough. Its best to use an organic lemon, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax, which contains toxins.
