Ingredients

600 ml Sweet cream, partially skimmed

175 g Sugar, white

2 piece Lemon, fresh, without shell

First, finely grate the zest of both lemons, then squeeze out their juice. Place a deeper pot on the stove and pour in the cream. Add sugar and slowly heat while stirring until the sugar dissolves. Bring to a boil while constantly stirring, add the lemon juice and zest, and cook on moderate heat for another 3 minutes to thicken the mixture.

Pour the mixture into four ceramic cups (or glass jars) and place them in the refrigerator for half an hour. Decorate the dessert with fresh mint or lemon balm leaves as desired.

Advice
Use an organic, unsprayed lemon. Butter cookies pair well with it. Its best to use organic lemons whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax containing toxins.
