Ingredients

100 g Sugar, white

360 ml Water

pieces Lemon zest, fresh

120 ml Juice, lemon

In a medium-sized saucepan, add water and sugar. Heat over medium heat until all the sugar dissolves, then remove the saucepan from the heat and stir in a strip of lemon zest. Let the syrup cool to room temperature.

Remove the lemon zest from the cooled syrup, then stir in the lemon juice. Pour the mixture into a rectangular metal baking dish or another container that is approximately 20 x 30 cm and at least 5 cm deep, which can be placed in the freezer.

Place the baking dish in the freezer for at least 3 hours. Every 30 minutes, stir the mixture well with a fork and scrape any larger ice crystals from the edges of the dish. This step is very important as it will result in small ice crystals with a fruity flavor.

Store the prepared granita in the freezer. When serving, scoop it into glasses and, if desired, add a splash of vodka.
