Lemon-Lime Egg Cream
This cream can be used as a substitute for jam and spread on toasted bread or pancakes. It is also an excellent filling for pies, pastries, and cakes. There are many possibilities, so we are sure it will find its place in your kitchen!

Ingredients

2 piece Lemon, fresh, without shell

180 g Sugar, white

115 g Butter, unsalted

Steps

Wash all fruits thoroughly and dry them with a kitchen towel. Finely grate the zest of all fruits and mix it with sugar. Then cut the fruits in half and squeeze the juice from all halves.

Crack the eggs into a large bowl and whisk them well with a hand whisk or fork. Pour water into a taller pot and bring it to a gentle boil. Once the water boils, place the bowl with the eggs on top of the pot (see tips). Add butter, juice, and the sugar-zest mixture to the bowl. Stir continuously and cook in the water bath for about 10 minutes until the ingredients combine and form a smooth creamy sauce.

Remove the bowl with the cream from the heat and let it cool to room temperature. Stir the cream several times while cooling to prevent a skin from forming on the surface.

Pour the cooled cream into a sterilized jar and seal it tightly. Store the jar in the refrigerator overnight to allow the cream to cool and set properly.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof container with the ingredients on top of another container with hot water and whisk the ingredients in the upper container with a whisk until they thicken and froth. The water in the lower container should not boil vigorously! It is best to use organic citrus fruits whose peel has not been treated with pesticides. If organic citrus fruits are not available, immerse the fruits in boiling water for a few minutes, then wipe them well to remove the wax, which contains toxins. For added aroma, you can optionally add a packet of vanilla sugar.
