A wonderful dessert for hot summer days that will perfectly round off any meal. You only need a few well-known ingredients, and the preparation is incredibly easy.

pieces Lemon, fresh, without shell

4 pieces Egg, egg yolk, fresh

70 g Sugar, white

40 g Butter, unsalted

400 ml Sweet cream

50 g Powdered sugar

Steps

Wash the lemons and dry them thoroughly with paper towels. Finely grate the zest, you will need 2 teaspoons for the recipe, and squeeze the juice from the fruits. You will need 60 milliliters of juice. Mix both with the egg yolks, sugar, and butter, then heat over a hot water bath while constantly stirring until the cream reaches 70 degrees Celsius. At this point, it will thicken, and if you dip a spoon into it, the cream will coat it nicely.

Pour the cream into a container or glass and cover it with plastic wrap. This will prevent a skin from forming on the surface of the cream. Let it cool completely.

Whip the cream together with the powdered sugar, then gently fold it into the cooled lemon cream. Divide the mousse into glasses and garnish with mint leaves and any berries of your choice. Place the dessert in the refrigerator until ready to serve.
