Lemon Muffins with Vanilla Cream

Steps

Preheat the oven to 220 degrees Celsius. Grease the muffin tin with butter or line it with paper liners.

In a bowl, sift together the flour, baking powder, baking soda, and salt. Add sugar and lemon zest, and mix the ingredients well.

In another bowl, beat the eggs with a hand whisk, then mix them with yogurt, melted butter, lemon juice, and vanilla extract.

Pour the wet mixture into the bowl with the dry ingredients, and mix everything with a whisk or spatula just enough to moisten and combine the ingredients. It's okay if there are still some lumps in the batter.

Fill the muffin cups almost to the top with the prepared batter. Bake the muffins for 3 minutes at 220 degrees Celsius, then reduce the temperature to 180 degrees and bake for another 12-17 minutes. To check if the muffins are done, insert a toothpick into one muffin - if it comes out clean, remove the tin from the oven.

Let the muffins cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.

While the muffins are cooling, prepare the cream. In a bowl, mix the cream cheese and softened butter well. Add vanilla and mix thoroughly, then finally mix in the sifted powdered sugar.

Transfer the prepared cream into a piping bag and pipe it onto the cooled muffins. Optionally, grate some lemon zest over the cream or use finely chopped candied lemon peel. Arrange the prepared muffins on a larger plate or platter and serve.
