Lemon Polenta Cake

Preheat the oven to 160 degrees Celsius. Grease a round baking dish with a diameter of 23 cm well with butter. Thoroughly wash the lemon under running water and dry it with a kitchen towel. Finely grate the zest, cut the lemon in half, and squeeze the juice from both halves.

In a bowl, using an electric mixer, cream the remaining butter and sugar until fluffy. Gradually (one by one) mix in the eggs. Add the polenta, ground almonds, and baking powder, and mix everything well until you get a smooth mixture without lumps. Finally, mix in the lemon zest, lemon juice, and lemon liqueur.

Pour the batter into the greased baking dish and place it in the preheated oven for about 50 minutes. If necessary, after 30 minutes of baking, cover the top of the cake with a piece of foil or baking paper to prevent the surface from burning too much.

Once the cake is baked, remove it from the oven and let it cool in the dish. Carefully remove the cooled cake from the dish, transfer it to a serving plate, and dust with powdered sugar. Cut the cake into pieces of any size, serve on plates, and enjoy. It pairs well with whipped cream or a scoop of ice cream.

Advice
It is best to use organic lemons, as their peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes, then wipe it thoroughly to remove the wax, which contains toxins. Take the butter out of the refrigerator at least two hours before preparation to allow it to warm up and soften.
