Ingredients

50 g Butter, unsalted

2 piece Lemon, fresh, without shell

115 g Sugar, white

2 piece Egg, fresh

50 g Wheat flour, white, multi-purpose

300 ml Milk, whole milk

Thoroughly wash the organic lemons and grate the zest, then cut them in half and squeeze out the juice. Preheat the oven to 190 degrees Celsius. Grease a 1.2-liter ovenproof dish with butter.

With a hand mixer, beat the remaining butter, lemon zest, and sugar into a pale cream. Add the egg yolk and flour and beat until you get a smooth mixture. Gradually beat in the lemon juice and milk. In a separate bowl, beat the egg whites into very stiff peaks.

Gently and slowly fold the beaten egg whites into the batter using a whisk, then pour everything into the prepared ovenproof dish. Place the dish in a deep baking pan and pour in enough hot water to reach halfway up the dish. Place the baking pan with the dish in the oven and bake the pudding for about 45 minutes, until golden.

Once the lemon pudding is baked, cut it into smaller pieces, serve on plates, and offer to your guests.

Advice
Dont be alarmed if the mixture curdles at first. Take the butter out of the refrigerator at least one hour before use. Its best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it thoroughly to remove the wax, which contains toxins.
