Lentil and Sweet Potato Soup

Ingredients

2 spoons Oil, plant, coconut

0.5 teaspoons Spices, cumin, seeds

1 teaspoon Spices, turmeric, ground

1 teaspoon Spices, curry powder

1 piece Onion, raw

2 pod Garlic, fresh

pieces Ginger, fresh

2 piece Sweet potato

300 g Lentils, raw

1.5 l Soup base, chicken, cube

pieces Yogurt, plain, from whole milk

Sort the lentils, place them in a sieve, and rinse thoroughly under running water. Peel the sweet potatoes and cut them into small cubes. Peel the onion and garlic, and chop them separately. Peel the ginger and grate it finely.

Heat oil in a pot and sauté the spices for one minute, then add the onion and season with half a teaspoon of salt. Once the onion softens, add the garlic and ginger, and sauté for another minute or until the garlic becomes fragrant.

Add the sweet potatoes and lentils to the pot. Mix well and pour in the broth. Bring the contents to a boil, then reduce the heat to medium and cook the soup for another 20 minutes. When the lentils and sweet potatoes soften, the soup is ready. Add more broth or water if needed during cooking.

Season the prepared soup with pepper and salt to taste. Serve it in soup bowls or deep plates. A spoonful of Greek yogurt (or sour cream) pairs excellently with the soup.
