Lentil Meatballs
Lentils are a very healthy and inexpensive food that should definitely not be missing in your diet. Because they contain a lot of easily digestible proteins and fibers and have a low energy value, they are also an ideal food for weight loss diets. They are excellent in soups, one-pot meals, and salads, and they also work very well in preparing very tasty meatless meatballs.

Ingredients

2 cups Lentils, cooked, can

2 piece Egg, fresh

40 g Cheese, Parmesan, grated

180 g Cheese, cottage cheese

2 pod Garlic, fresh

1 piece Onion, raw

pieces Parsley, fresh

1 teaspoon Lemon zest, fresh

0.5 teaspoons Salt, table

2 pinch Spices, pepper, black

60 g Breadcrumbs, dried

4 spoon Oil, olive
Steps

Clean the fresh herbs, rinse them under running water, shake them well, and roughly chop them. Peel the onion and garlic and chop them finely separately. Sauté the chopped onion in a pan with a little olive oil. Let the sautéed onion cool slightly.

Drain the cooked lentils and place them in an electric chopper. Add the eggs, garlic, sautéed onion, Parmesan, cottage cheese, lemon zest, chopped herbs, salt, and pepper. Mix the ingredients just enough to combine them well and form a uniform mixture. Transfer the mixture to a bowl and mix it with breadcrumbs. Cover the bowl with food wrap and let the mixture rest for 30 minutes.

With wet hands, shape the mixture into medium-sized meatballs. Place a pan on the stove and heat a little olive oil in it. Place the prepared meatballs in the heated oil and slowly cook them over low heat until they are nicely browned on the bottom. Carefully turn the meatballs with a spatula and cook them on the other side.

Serve the cooked meatballs on plates. Serve them with a chosen side dish, sauce, and/or a large bowl of salad.
