Lentil Roast
A delicious meatless roast that will impress even meat-eaters. A great recipe for preparing a meal for a larger group or for special occasions, such as Christmas dinner. It pairs perfectly with a bowl of green salad and roasted or mashed potatoes.

Steps

Clean and finely chop the vegetables and mushrooms. Peel the onion and garlic, and finely chop them separately.

First, sauté the onion in oil, then add the mushrooms and garlic. When the mushrooms release all their water, lightly salt and pepper them, and cook them well. Add the nuts and the remaining vegetables. Sauté everything together for an additional 5-7 minutes.

In a larger bowl, mix all the ingredients for the roast: cooked lentils, sautéed vegetables, and spices. Mix all the ingredients well so they bind together nicely - you can also mix with your hands. The resulting mixture will be quite compact and slightly doughy.

Transfer the mixture into a smaller, elongated baking dish and spread BBQ sauce on top.

Bake the lentil roast at 180 degrees Celsius for a good 40 minutes. Once baked, let it cool before slicing. Enjoy your meal!
