Lentil Soup with Vegetables

600 g Potatoes, white

170 g Lentils, raw

2 pod Garlic, fresh

1 l Soup base, chicken, cube

1 piece Spices, bay (leaves)

Peel the onion and garlic, then finely chop them separately. Clean the carrot, wash it, and cut it into smaller pieces. Peel the potato, wash it, and cut it into slightly larger pieces than the carrot. Clean the celery and parsley root, wash them, and finely chop them. Sort through the lentils, place them in a sieve, rinse under running water, and drain well.

Heat the oil in a pot and sauté the chopped onion until translucent. Add all the vegetables and sauté them together with the onion for 3 to 4 minutes, stirring occasionally. Then add the lentils and garlic to the pot. Stir and sauté for another 2 minutes, then pour the broth over the ingredients in the pot. Add the bay leaf and bring to a boil.

Once the liquid boils, reduce the heat, partially cover the pot, and let the soup simmer gently for 40 minutes or until the lentils are completely soft. Season with salt and pepper to taste. If needed, add a bit more liquid (water or broth).

Rinse the parsley under running water, shake it dry, and roughly chop it. Taste the prepared soup and adjust the seasoning with pepper and salt if desired. Serve the soup in deep bowls or soup cups, sprinkle with chopped parsley, garnish with yogurt or sour cream, and serve with bread.
