Lentil Soup with Vegetables and Spices
Do something good for your health and digestion and treat yourself to a bowl of warm lentil soup. Lentils contain a lot of easily digestible proteins and fibers, making them excellent for speeding up and regulating digestion. Since they have a low energy value, they are also an ideal food for weight-loss diets.

Steps

Peel the onion and garlic, then finely chop them separately. Clean the carrot and celery, wash them, and cut them into pieces. Sort through the lentils, place them in a sieve, rinse under running water, and drain well.

Pour olive oil into a large pot and heat it over moderate heat. Add the onion, carrot, and celery. Sauté the vegetables, stirring occasionally, for 6 to 7 minutes or until the onion becomes translucent. Add the bay leaf, cumin, coriander, and garlic, and sauté the ingredients in the pot, stirring constantly, for another minute.

Add the lentils, tomato, and broth to the pot. Stir the ingredients, increase the heat, and bring the soup to a boil. Once it boils, reduce the heat, cover the pot, and let the soup simmer for 35 to 40 minutes or until the lentils are completely soft. Season with salt to taste, and optionally add a little pepper.

Rinse the parsley under running water, shake it dry, and finely chop it. Serve the prepared soup in deep bowls or soup cups. Sprinkle with a little chopped parsley and serve with bread or crackers.
