Lime Pie
Creamy lime pie has three layers that complement each other beautifully. A base made of biscuits, a refreshing lime cream filling, and a top layer of whipped cream. Mmmm… divine!

Ingredients
Cookie bottom

300 g Breadcrumbs, dried

150 g Butter, unsalted
Lime cream

3 pieces Egg, egg yolk, fresh

400 g Milk, powdered, whole milk

4 pieces Lime, fresh

pieces Lemon zest, fresh

300 ml Sweet cream

1.5 spoons Powdered sugar

Preheat the oven to 160 degrees Celsius. Melt the butter slowly in a small pot over low heat. In a food processor, finely grind the biscuits and mix them with the melted butter.

Lightly grease a round pie tin with a removable base (22 cm in diameter) with butter. Line the bottom and sides of the tin with baking paper. Sprinkle half of the biscuit mixture into the tin and press it firmly against the bottom with your hands. Press the remaining mixture against the sides of the tin to create a nice edge. Bake the biscuit base in the preheated oven for 10 minutes. Allow the baked base to cool.

In a large bowl, beat the egg yolks with an electric mixer for one minute. Add the condensed milk and mix for another 3 minutes, then add the lime zest and juice and mix for an additional 3 minutes. Pour the cream onto the cooled base and bake the pie for 15 minutes.

Allow the baked pie to cool to room temperature first, then refrigerate it for another 3 hours (preferably overnight).

Lightly whip the sweet cream with powdered sugar. Take the cooled pie out of the refrigerator. Carefully remove it from the tin and serve it on a nice plate or platter. Decorate the top with whipped cream and grate a little lime zest over it. Serve the prepared dessert.
